Ballet des Vignes is the name given to our blended red wines. Ballet des Vignes means "dance of the vines" in French . To create the perfect dance for this vintage, we blended Petite Sirah and Cabernet Sauvignon to achieve a fruit-forwad and "silky smooth" red blend.
The Petite Sirah grapes were grown at Rosciano Vineyards on Tesla Road in Livermore. This vineyard typically produces heavy, thick and dark wine. Intense flavors abound. The Cabernet Sauvignon grapes were grown on the Pleasanton Ridge far above Pleasanton at the highest altitude of any grape grown in Livermore Valley. This location provides both heat required to ripen the grapes but maximum ocean sea breeze evenings to cool the grapes, resulting in an intensely flavored wine.
Both grapes were harvested in the middle of the month of October 2009. The sugar of the Cabernet was 24% and the Petite Sirah was 23.5%. The acids in the wines were around 6.5 with pH of 3.5. Fermentation was accomplished in open bins using a "cook slow" fermentation to extract extra color and tannins. Two year old American and French oak barrels were utilized with a medium toast to add the perfect amount of smoke and vanilla flavors to the wine. Minimal filtration was used to preserve maximum flavors .
This wine will pair well with rich cheeses, hearty soups and grilled or broiled meats. Also a nice match for spicy, peppery and tomato-based sauces or dishes flavored with ginger or soy sauce.
